Gomes de Sá style codfish with baked sweet potatoes

Ingredients

2 cod fillets ready to cook
1 clove of garlic
1 bay leaf
2 boiled eggs
1 red onion
2 sweet potatoes
3 c. olive oil soup
black pepper q.b.
Chopped parsley to taste
8 black olives

To prepare a delicious recipe for Gomes de Sá codfish with sweet potato, start by defrosting the cod fillets.

Boil the cod in water with a crushed garlic clove and a bay leaf for about 7 minutes.

Allow to cool and shred into flakes.

Peel the sweet potatoes and cut it into cubes. Add one of the tablespoons of olive oil to moisten the potatoes and bake them on a sheet of baking paper at 180°C for about 25min or until they start to crisp. Set aside.

In a frying pan place the two tablespoons of olive oil and lightly sauté the sliced onion until cooked. Add the cod flakes, mix, and season with a pinch of ground black pepper.

At the end add the potatoes, the sliced eggs and sprinkle with chopped parsley and black olives.
