Lusitanian Codfish from Tastemade

Ingredients

Cod loin
2 cups of olive oil
1 red onion cut into petals
2 cloves garlic in flakes
1 bay leaf
½ red pepper
½ yellow pepper
1 cup pre-cooked potato balls
salt
Black pepper
1 boiled egg
1 tablespoon of parsley

Preparation

Place the loins in a pan and add water to cover them. Place over medium heat and as soon as the water boils, cook for 10 minutes.

Remove from water and set aside in a container. In a high frying pan, add a little olive oil and sauté the onion, the garlic slices and the bay leaf.

Add the red and yellow peppers and sauté a little more.

Place the codfish loin, the potato balls, adjust the salt and season with black pepper.

Add the rest of the olive oil, cover and leave on a low heat for 20 minutes to enhance the flavours.

Finish with the chopped hard-boiled egg and the chopped parsley on top the Lusitanian Codfish from Tastemade.
