Ingredients

1 Riberalves cod fillet, cooked and shredded
Olive oil
Onion
125 ml semi-skimmed milk (or unsweetened plant-based drink)
15g or 1 tablespoon of Maizena or spelled flour
4 organic eggs (3 yolks and 4 whites)

Preparation

In a pan with a tablespoon of olive oil, add the chopped onion and the shredded codfish. Let it brown.

Separately, heat the milk in a pan. When boiling, add the flour, stirring constantly for about 3-4 minutes, until it reaches a creamy consistency.

Add the white sauce to the codfish, stirring. Then add the egg yolks, one by one, until incorporated.

Finally add the beaten egg whites to the remaining mixture and stir gently.

Bake in trays for 20 minutes.

The Mariana style Codfish Muffins are ready. Eat immediately with a good salad!
