Mini Codfish and Cauliflower Quiche, by Lillian Barros

Ingredients

For the Base:
1/2 cauliflower
1 egg
Spices to taste

For the Filling:
3 eggs
50 ml vegetable drink
Riberalves Ready-to-cook Codfish
Garlic and bay leaf
Pepper to taste

Preparation

Start preparing the base by chopping the cauliflower and microwaving it for 3 minutes to soften it. Then add the egg and seasonings and mix until you get a smooth, even dough. Roll out the dough and put it into individual quiche tins.

To make the filling, start by boiling the codfish with 1 clove of garlic and a bay leaf. Beat the eggs, add the vegetable drink and season.

Now add some of the flaked cod to each tin and top with the egg and vegetable drink mixture.

Note: you can add other ingredients to the filling, such as chopped vegetables, if desired.

Serve your Mini Codfish and Cauliflower Quiche as you like it.
