Porto-style codfish

Ingredients

800 g deep-frozen soaked cod loins Riberalves
1 kg of potatoes
3 onions
3 cloves of garlic
2 dl of olive oil
1 bay leaf
Morrones peppers q.b.
Olives q.s.
parsley q.b.
Salt and pepper q.b.

Defrost the codfish loins, dry them, season them with salt and pepper and place them in a dish or Pyrex dish. Set aside.

Wash the potatoes and cook them in a pan in salted water. Then remove from the water, let them cool down and peel them. Set aside.

Peel and wash the onions and garlic cloves, slice the onion and chop the garlic. Arrange them on top of the codfish drizzle with olive oil and bake in the oven at 180ºC for 25 minutes.

Wash and cut the peppers in half, remove the seeds and white skin and cut into strips. Then cut the potatoes into slices and add to the codfish. Drizzle with the sauce from the tray and place in the oven until everything is well baked. Remove the Porto-style Codfish from the oven, decorate with the peppers, olives and bay leaf, sprinkle with chopped parsley and serve.
