Codfish with Port wine

Ingredients
1 good glass of Port wine (dry)
250 g of mushrooms
1 kg of ripe tomatoes
200 ml of olive oil
2 garlic cloves
1 bunch of parsley
2 eggs
Flour
Salt and pepper

Cut the codfish loins into fillets, coat them in flour and egg and fry them in good olive oil. Set aside.
In the same olive oil, add the tomatoes cleaned and diced, the finely chopped garlic cloves, chopped parsley, the mushrooms cut into strips and the port wine. Adjust the seasoning and cook for 10 to 15 minutes over a low heat. Place the codfish fillets in an oven tray and cover them with this sauce. Bake in a hot oven for another 15 minutes.
Serve the Codfish with Port wine with potato sticks and a green salad. And with a Douro wine to keep it consistent…
