Scoop the sweet potato flesh (you can microwave it for 2 minutes to soften the flesh). The flesh can be used to make a sweet potato mash.
Boil and flake the codfish. Lightly fry 1/2 onion and 1/2 leek in a little olive oil. Add the codfish. Place the mixture inside the sweet potato and bake until golden.
Serve with boiled Brussel sprouts. Sprinkle with oregano or Provençal herbs.
