Ingredients

600 g Gourmet Codfish Steaks
300 g cornbread, without the crust
100 g chopped walnuts
100 g dates
2 onions
3 garlic cloves
100 ml olive oil
1 sprig of parsley
Salt and pepper to taste

Preparation

Codfish with Cornbread and nuts. Shall we make it? With Riberalves Codfish, of course! Take a peek!

Boil the codfish for 8 minutes. Once cooked, remove the skin and bones and set to the side.

Peel and chop the onions and garlic. Add half of the olive oil to a frying pan. Fry the onions and garlic until golden, stirring every now and then. Add the codfish, season with salt and pepper, stir and remove from the heat.

Break up the cornbread into chunks and whizz with the nuts and pitted dates. Add the chopped parsley.

Spread the codfish mixture onto a baking tray, top with the cornbread mixture and drizzle with the remaining olive oil. Cook at 180°C in a pre-heated oven for 15 minutes or until golden.

Your codfish with cornbread and nuts is ready. Serve hot.
