2.5 dl of skimmed milk
40 g of flour
40 g of margarine
4 egg whites
2 egg yolks
salt and pepper to taste (don't use too much salt)
nutmeg to taste
Let’s prepare a Ágata’s Light codfish soufflé? a simple and healthy recipe and with the best protein, codfish.
In a pan, mix the milk, flour, and margarine. Bring to the boil. Stir until you obtain a thick sauce.
Then remove from the heat and add the previously cooked and shredded codfish. Stir. Let it cool a little and then add the egg yolks and the juice of half a lemon. Season with salt, pepper, and nutmeg.
Beat the egg whites until stiff. Carefully add to the previous mixture.
Pour the whole mixture into a greased tin and bake in the oven for about 25 minutes. Serve the Ágata’s Light codfish soufflé immediately and accompany with a mixed salad (lettuce, tomato, grated carrot, and onion).
