Codfish with raspberry sauce and creamy spinach

Ingredients

2 Riberalves Gourmet Codfish Steaks
Olive oil
1 bay leaf
Black pepper grains to taste
1 head of garlic
1 red onion
200 g spinach leaves
Salt to taste
100 g grated mozzarella
150 g raspberries
1 tsp. honey

Preparation

A special recipe for a special day: Codfish with raspberry sauce and creamy spinach. Take a peek at the recipe!

Allow the codfish steaks to defrost, rinse under cold tap water and dry using kitchen paper. Place the codfish streaks in a large pan and cover with olive oil. Add the bay leaf, 1 tablespoon of pepper grains and the head of garlic, cut in half. Simmer on low heat for approximately 20 minutes. Drain the olive oil (keep it in a glass jar or bottle for future use) and remove the bone in the middle of each steak.

To prepare the creamy spinach: gently fry the red onion in olive oil until soft. Stir in the spinach, season with salt and freshly ground black pepper, cover the pan and cook on low heat until tender or to your taste. Stir in the grated mozzarella and cook on low heat for 1-2 minutes to melt the cheese. Set to the side.

To prepare the raspberry sauce: heat 2tablespoons of olive oil, add the raspberries (keep a few to decorate) and cook on low heat for 5 minutes, stirring occasionally. Stir in the honey and cook for a further 2-3 minutes on low heat.

Serve the Codfish Steaks with raspberry sauce and creamy spinach and enjoy!
