Codfish Ceviche with Mango and Passionfruit

Ingredients

1 ready-to-cook soaked cod loin
¼ leek (white part) or ¼ red onion
½ firm ripe mango
1 passion fruit
1 strip of red pepper
Juice of 2 limes or 1 lemon
Chopped coriander q.b.
black pepper q.b.
extra virgin olive oil q.b

Preparation

Cut the codfish loin into small cubes in a bowl. Chop the leek and the chopped red pepper strip and add to the codfish.

Add the coriander, pepper, passionfruit pulp and citrus juice.

Season with olive oil and at the end add the mango. Mix together and serve chilled.
