Codfish “Meatballs”

Thinking of a delicious recipe with the best of the traditional Portuguese cuisine? Codfish “Meatballs” from the nutritionist Ana Bravo.

Ingredients

250g Riberalves cod loin
1+1/2 onion, thinly sliced
1/4 chopped red pepper
1/4 green pepper, thinly sliced
1 bay leaf
1 tablespoon of olive oil
2 minced garlic cloves
4 to 6 tablespoons of chopped cornbread
q.s. Chopped parsley
q.s. salad to taste

Preparation

To prepare the delicious codfish “Meatballs”, Defrost the codfish, remove the skin and bones, and shred it.

Place the olive oil in a wok followed by the garlic, peppers, onion, and bay leaf. Cook over a low heat for about 15 minutes (or until the onion and peppers have softened).

Involve the codfish and cook until all the liquid has evaporated (about 5 minutes).

Set the oven at 180 degrees.

Mix the codfish mixture with the parsley and the corn bread.

Form codfish “meatballs” and bake in the oven on a baking tray lined with baking paper for about 20 minutes, or until cooked and golden brown.

Serve with salad as desired.
