Ingredients

250g Riberalves cod cheeks
1 red onion
1 dessert spoon of olive oil
2 sweet potatoes (small)
q.s. paprika
q.s. dry parsley
q.s. fresh parsley
q.s. chilli (optional)
50 ml milk or plant-based drink
q.s. grated low-fat cheese

To prepare a delicious recipe for Codfish Cheeks au gratin , start by defrosting the codfish cheeks.

Cut the onion into half-moons and heat it in a pan with the olive oil and paprika. Wash, slice and steam cook the sweet potato. Remove the skin.

Set the oven to 220 degrees. Place the onion on an earthenware tray, the codfish cheeks on top and around the slices of sweet potato.

Sprinkle with dried parsley and chilli to taste.

Pour in the milk, sprinkle with grated cheese and place in the oven, where it cooks until toasted (about 15 minutes).

Serve sprinkled with parsley.
