Codfish Confit with Golden Rice

Ingredients

4 Riberalves Ready-to-Cook (Cured 9+ months) Codfish Loins
1 litre olive oil
2 cloves garlic, whole
1 thyme sprig
1 clove garlic, chopped
200 g basmati rice
1 dessertspoon turmeric
50 g raisins
50 g mixed nuts
1 tablespoon butter
Chopped parsley to taste

Put the codfish loins, the whole garlic cloves and the thyme into a pot. Cover with olive oil and cook until it starts to boil, then turn the heat down to a simmer and cook for 12 minutes.

Put the chopped garlic clove, 1 tablespoon of olive oil and the turmeric into another pot and cook until the turmeric browns slightly. Add the rice and stir well so that it all turns yellow. Add 400 ml of water and bring to a boil, then cook until the water evaporates, about 15 minutes. Reserve.

Put the butter in a frying pan to melt and add the nuts and raisins. When they are nicely aromatic, add the rice and stir.

Sprinkle parsley over your Codfish Confit with Golden Rice before serving.
