Olive oil to taste
4 dates
30 g bacon
1 clove garlic
250 g broccolini
150 g cherry tomatoes
Salt and black pepper to taste

Thaw the codfish loins, rinse them under cold running water, dry them well with kitchen paper, brush them with olive oil and arrange them in an ovenproof dish greased with olive oil.
Chop the dates and the bacon coarsely and spread them over the codfish loins. Bake in a preheated oven at 200 °C for approximately 20 minutes.
Meanwhile, soften the minced garlic in olive oil and sauté the broccolini and cherry tomatoes until they reach your desired consistency (more or less al dente), seasoning with salt and black pepper.
Serve the oven baked codfish loins with bacon and dates along with the sautéed broccolini and tomatoes.
