Codfish on a bed of collard greens (“Portuguese cabbage”)

Ingredients

4 Riberalves Ready-to-Cook Gourmet Codfish Loins
150 g bacon, cut into strips
2 cloves garlic, chopped
300 g collard greens (“Portuguese cabbage”) finely cut
100 g farofa
400 g potatoes for baking
1 tablespoon olive oil
Sea salt
Black pepper to taste

Preparation

Drizzle the potatoes with olive oil and sprinkle them with salt. Bake in the oven at 180 ºC for 30 minutes.

Boil the codfish loins for 10min and then remove them immediately from the water.

Meanwhile sauté the bacon in a frying pan in its own fat until golden brown. Remove and set aside.

Put the garlic cloves into the same frying pan and cook until crisp. Add the cabbage, season with salt and pepper, and cook until it shrinks. Remove and set aside.

Put a dash of olive oil into the same frying pan, heat it up, add the farofa and cook until it browns.

Serve the codfish on the bed of greens with the bacon and sprinkle with the farofa. Serve with the potatoes.
