Codfish roll
Codfish roll made with the best Portuguese cured codfish. Riberalves codfish, ready to cook. Ready to taste good!
Ingredients
1 c. coffee yeast
2 eggs
1/2 cup lactose-free milk
1 onion
2 garlic cloves
1 bay leaf
q.s. chilli pepper
1 c. olive oil soup
1 cod loin
q.s. nutmeg
q.s. Chopped parsley
q.s. salad
Preparation
To prepare a delicious Codfish Roll, defrost the codfish.
In a bowl mix the flour with the yeast, the egg yolks, and the milk. Then fold in the beaten egg whites and place the mixture in the oven on a baking tray lined with baking paper.
Bake for about 20 minutes at 180 degrees. In a pan place the olive oil, the onion, the garlic, and the chilli pepper, chopped.
Bring to the boil and add a bay leaf. Meanwhile, slice the codfish, already removed from the skin and bones, adding it to the pan as soon as the onion has turned translucent.
Keep it on a low heat.
Season with nutmeg and set aside. Transfer the pastry to a clean kitchen towel, arrange the codfish mixture on top and sprinkle with chopped parsley.
Roll up and serve the Codfish Roll with salad to taste.
