Ingredients
750 ml olive oil
1 clove garlic
Rosemary
Thyme
1 cup cooked chickpeas
1 chorizo
3 tablespoons sofrito
Cherry tomatoes
1 tablespoon tomato passata
300 ml of homemade pork or chicken stock
Pinch of salt
Parsley

To prepare your codfish confit, put a decent amount of olive oil, garlic, thyme and rosemary in a pan, and put it on low heat for 20 minutes. Don’t let it boil; if you see it starting to boil, turn off the heat.
Cook the chickpeas in water for 40 minutes to an hour until al dente.
For the garnish: Fry the chorizo in a frying pan, then add the sofrito and a little tomato passata and mix everything together.
Drain the chickpeas and add them to the chorizo pan along with the homemade pork stock and a pinch of salt. Simmer until it reduces to a thick sauce.
