Codfish with cornbread

Ingredients

1 kg deep-frozen soaked codfish Riberalves
4 onions, cut into very thin rings
1 cup of olive oil
2 minced garlic cloves
150 g (good) sausage
100 g crushed cornbread
2 eggs
2 tablespoons of cream (optional)
Salt and pepper

Preparation

If you’re looking for a recipe for a nice family meal that everyone will enjoy, Codfish with cornbread is the perfect recipe for what you want.

Once cooked, drain the codfish clean it and ­break it into pieces. Sauté over low heat in a pan in olive oil, chopped onion and garlic.

Cover the pan and let it cook for about 15 minutes, stirring from time to time. When the onions are almost cooked, add the sliced sausage.

Place the mixture on an oven tray and spread the cornbread on top. Beat the eggs, season, add two tablespoons of cream (optional) and cover the codfish. Bake in a medium oven until golden brown.

It should be served the Codfish with cornbread with mashed potatoes (enriched with good butter, pepper and nutmeg).
