Codfish with rapini or spinach by Ágata, by Ágata Roquette

Ingredients

150 g deep-frozen fillet codfish Riberalves
2.5 dl of skimmed milk
40 g of flour
40 g of margarine
4 egg whites
2 egg yolks
1/2 lemon
salt and pepper to taste (don't use too much salt)
nutmeg to taste

Preparation

Shall we prepare Codfish with rapini or spinach by Ágata? A simple and healthy recipe and with the best protein, the codfish.

Boil the codfish and the spinach or rapini.

In a pan put the olive oil and cook the garlic until golden brown. Place the codfish and spinach and mix well in the olive oil, onion and garlic.

Season with a little salt, pepper and nutmeg.

Place everything in a medium tin. Spread two tablespoons of grated Mozzarella cheese and bake in the oven to gratin.
