Salad of Codfish with chickpeas, Perfect for any meal, with the best codfish ready to cook Riberalves. Ready to taste good!

Ingredients

600 g deep-frozen soaked codfish Riberalves
500 g of chickpeas
2 carrots
1 bunch of coriander
1 bunch of parsley
2 onions
2 garlic cloves
Olive oil
peppercorns
1 teaspoon of lemon juice
Salt and pepper
Crisp lettuce to taste

Preparation

Soak the chickpeas in the fridge for 24 hours. Remove it and cook it in water until soft. Set aside. Place the codfish on a platter, drizzle it with olive oil, add the finely chopped coriander and leave it to drain for 3 hours.

In the water in which the carrots, parsley, onion, garlic, and peppercorns were pre-cooked, simmer the codfish on a low heat for 10 minutes. Remove the codfish and vegetables and drain everything. Dice the vegetables into small cubes. Once everything is cooled, mix with the chickpeas, season with olive oil and a few tears of lemon juice. Adjust the salt and pepper and serve on top of curly lettuce leaves.
