Baked codfish with chorizo and potatoes

Preparing a delicious baked codfish with chorizo and potatoes has never been easier. Here’s the full recipe and bon appétit!

Ingredients

800 g deep-frozen soaked cod fillets Riberalves
1/2 chorizo
1 kg of potatoes
2 onions
4 cloves of garlic
4 tablespoons of olive oil
2 bay leaves
1 pinch of sweet pepper
parsley q.b.
Salt and pepper q.b.
Frying oil

Preparation

Defrost the codfish fillets and place them on a tray.

Peel and chop 2 cloves of garlic, spread them over the codfish add the bay leaves, season with pepper, drizzle with half the olive oil and bake in a preheated oven at 180 ºC for about 25 minutes or until the codfish is well roasted.

Remove it from the oven, let it cool down, remove the skin and bones and shred it. Strain the sauce from the tray through a sieve and set aside.

Peel and wash the potatoes, cut them into wedges, fry them in oil and place them to drain on absorbent paper. Peel and wash the onions and the remaining garlic cloves, cut the onions into half-moons and chop the garlic.

Pour the rest of the olive oil into a pan, add the sauce from the baked codfish, heat it up, add the onion, the garlic and the sliced chorizo and fry, stirring occasionally, until the onion is golden brown.

Then add the codfish, the fried potatoes and the paprika, mix well, adjust the seasoning and leave to heat through. Remove from the heat, place on a tray or platter and serve the Baked codfish with chorizo sprinkled with chopped parsley.
