Codfish and courgette pâté

Ingredients
200 g Riberalves Ready-to-Cook Shredded Codfish
1 courgette, grated
1/2 onion, chopped
1 tablespoon olive oil
1/2 teaspoon nutmeg
1/2 teaspoon turmeric
Chopped parsley to taste

Preparation
Put the olive oil, onion and spices into a pot.
Fry gently and as soon as the onion becomes translucent add the codfish and the courgette (after washing, grating and removing excess water).
After cooking over low heat until most of the water has evaporated, sprinkle with chopped parsley and serve cold, with beet bread toast or whichever type you prefer.
Serves two as a main meal or more as a starter or snack but either way it’s the perfect healthy nibble to accompany some convivial conversation.
