Baked codfish with courgette

200 g Riberalves codfish
2 garlic cloves
1 onion
1 tbsp. olive oil
1/2 tsp. turmeric
3 chopped tomatoes
1 courgette
Parsley to taste
1 slice low-fat cheese, grated


To prepare this baked codfish with courgette, start by cooking the codfish:

  • Place the frozen codfish in a pan and cover with water.
  • Bring to the boil and then cook for 10 minutes. It’s ready!

*For a 250 g steak

Remove the skin and bones and flake.

To prepare the tomato sauce, place the tomatoes, chopped garlic and parsley in a pan. Cook (approximately 15 minutes) and set to the side (you can also use a handheld blender to obtain a smooth sauce).
Set the oven to 190°C.

Add the olive oil, chopped garlic clove, onion and turmeric to a separate pan. Cook on low heat until tender. Add the codfish and cook for approximately 5 minutes.

In the meantime, slice a courgette and remove the core (you can use a corer). The core can be used to make a soup.

Place the courgette slices on a baking tray, stuff them with the codfish and onion mixture, pour the tomato sauce on top and sprinkle with the grated cheese. Bake for approximately 20 minutes (or until the cheese melts).
