Codfish Moqueca

Ingredients

250 g cod cheeks
1 tablespoon of coconut oil
1 coffee spoon of turmeric
2 minced garlic cloves
1/2 chopped onion
1 chopped tomato
1 small courgette
1 cup chopped broccoli
q.s. chilli (optional)
200ml coconut drink
q.s. fresh herbs

Preparation

Defrost the codfish cheeks.

Set the oven to 200 degrees.

In a wok heat the coconut oil with the turmeric, garlic, chilli pepper to taste and the onion.

As soon as the onion is translucent, add the tomato. Wash, peel and dice the courgette.

Add the courgette to the previous preparation, together with the broccoli. Let it cook for about 5 minutes.

Transfer to an oven-proof dish. Arrange the codfish cheeks and add the coconut drink (the cheeks should remain immersed, if necessary add water or more coconut drink).

Bake in the oven for about 25 minutes, until it boils and the cheeks are cooked.

Serve the Codfish Moqueca sprinkled with fresh herbs and chilli pepper.
