Ingredients
Olive oil q.b.
1 onion
2 garlic cloves
1 bay leaf
500g of ripe tomato
1 tablespoon of tomato pulp
100 ml of white wine
Salt q.b.
black pepper q.b.
parsley q.b.
Preparation
To prepare this delicious recipe for Stewed Codfish Cheeks with Sautéed Rapini, start by defrosting the codfish cheeks and set aside.
Soften the chopped onion and garlic with the bay leaf in olive oil.
Add the chopped tomatoes (peeled) and tomato pulp and cook for 7 to 8 minutes. Then, refresh with the white wine and boil for 1 to 2 minutes to evaporate the alcohol.
Finally add the codfish cheeks, season lightly with salt and freshly ground black pepper, add the chopped parsley, mix and cook with the pan covered, for 6 to 8 minutes, stirring from time to time so as not to stick.
Serve the Stewed Codfish Cheeks with Sautéed Rapini sprinkled with chopped parsley, accompanied by the rapini sautéed in olive oil and garlic, and boiled potatoes.
