Codfish Moqueca

Ingredients

800 g of deep-frozen soaked traditional cod fillets Riberalves
4 tomatoes
1 red pepper
1 green pepper
1 large onion
2 garlic cloves
4 dl of coconut milk
0.5 dl of olive oil
50 g of grated coconut
2 chilli peppers
1 bay leaf
Coriander q.s.
Salt q.b.

Preparation

Defrost the codfish fillets and cut them into pieces rejecting the central bone. Wash the peppers, cut them in half, remove the seeds and white skin and then cut them into strips. Peel and wash the onion and garlic cloves, slice the onion and chop the garlic. Wash and prepare the tomatoes and slice them as well.

Heat the olive oil in a pan, add the onion, the garlic, the bay leaf and the peppers and fry until soft. Then add the tomato, the coconut milk and the chillies and cook for 5 minutes.

Add the codfish and the grated coconut, adjust the salt and cook for about 15 minutes more. Remove from the heat and serve sprinkled with chopped coriander. The codfish moqueca is ready!
