Ingredients

2 cooked deep-frozen soaked cod loins Riberalves
500 g puff pastry
100 g grated island cheese
2 leeks
1 grated carrot
Salt and pepper
Olive oil
1 egg yolk

Preparation

Cut the leek into thin slices and sauté in olive oil with salt and pepper. Add the grated carrot and cook for about 10 minutes.

Meanwhile, roll out the pastry and divide it into 4 rectangles. Shred the codfish and divide it into the rectangles of puff pastry, place the vegetables on top and finally the grated cheese. Close the pastry in a bundle and seal well. Place the puff pastry on a baking tray and brush the surface with the beaten egg yolk.

Bake in the oven, which should be 220ºC, until the puff pastry is golden brown and well puffed.
