Ingredients

1 kg of deep-frozen soaked cod loins Gourmet Riberalves
1 large can of cowpeas
1/2 red pepper
1/2 green pepper
3 cloves of garlic
4 tablespoons of olive oil + 1 tsp of olive oil
1 dessert spoon of vinegar + 1 tsp of vinegar
Coriander q.s.
Salt and pepper q.b.

Preparation

When the codfish fillets are slightly defrosted, remove the skins and bones and cut into thin slices. Set aside.

Wash the peppers, remove the seeds, cut into small cubes and place in a bowl. Open the can of cowpeas, put them in a sieve and rinse them under cold water. Drain well and add to the peppers. Drizzle with the olive oil and vinegar, season with salt and pepper and mix. Place the salad in a shallow dish and arrange the codfish slices around it.
