Codfish Soufflé with Potatoes

Ingredients

500 g deep-frozen soaked codfish Riberalves
250 g of boiled potatoes
2 cups of milk
2 tablespoons of olive oil
4 tablespoons of butter
3 tablespoons grated Parmesan cheese
5 eggs (separate the whites from the yolks)
1 bunch of chives

Boil the codfish, remove the skin and bones, and shred it. Season with good olive oil and set aside.

Pass the boiled potatoes through a potato ricer. Add the codfish, butter, 2/3 of the cheese, milk, and egg yolks. Mix well and add the chopped chives. Beat the egg whites until stiff and incorporate them with a wooden spatula, taking care not to break them.

Place in a buttered soufflé dish.

Sprinkle the Codfish Soufflé with Potatoes with the remaining grated cheese and bake in a hot oven (200 ºC) until risen and golden. Serve immediately!
