Codfish with Dijon mustard

Ingredients

500 g cooked Riberalves cod, without skin or bones
4 tablespoons of butter or margarine
4 tablespoons of wheat flour
1/2 l of cod stock
1/2 l of milk
2 onions
2 tablespoons of olive oil
2 tablespoons (good) Dijon mustard
1 cup of chopped green olives
2 cups grated Parmesan cheese
4 chopped boiled eggs
1 bunch of chopped coriander
Salt, pepper and nutmeg
2 beaten eggs

Preparation

Shall we prepare a Codfish with Dijon mustard? A simple, practical and tasty recipe. Riberalves Codfish Ready to taste good!

Boil the codfish, break it into flakes and set aside.

Gradually add the flour, butter, codfish stock and milk, stirring constantly until you obtain a thick cream.

Add the chopped onions browned in olive oil, the mustard, the olives, the cheese (reserving some for sprinkling), the boiled eggs, the codfish and the coriander, and adjust the seasoning.

Place in a well buttered baking dish, cover with the beaten eggs, sprinkle with more grated parmesan cheese.

Bake the Codfish with Dijon mustard in a preheated oven at 220ºC until it gains a golden crust.
