Conde da Guarda Style Codfish

Ingredients

500 g shredded codfish
500 g potatoes
3 cloves garlic
1/2 onion
Olive oil to taste
200 g cream
1 tablespoon butter
80 g grated ilha (“island”) cheese
Nutmeg to taste
Black pepper to taste
Salt to taste

.Boil the potatoes, mash them with a fork, and set aside.

.Cook the codfish in boiling water for 2 minutes.

.Gently fry the onion and garlic in olive oil for five minutes.

.Add the codfish and stir well to mix the ingredients together.

.Add the potatoes to the codfish mixture. Add the cream and mix everything together until you get a smooth, even mixture. Season with nutmeg, black pepper and salt to taste.
