Ingredients
300 g macaroni or other tubular pasta
Salt and black pepper to taste
200 ml cream
200 ml tomato pulp
150 g cooked corn
12 pitted black olives
200 g grated cheese mixture
Oregano to taste
Preparation
Here’s how to make a tasty Creamy codfish pasta. See the recipe below!
Thaw the codfish steaks and cook them in boiling water for about 10 minutes. Drain, remove the skin and bones, and flake.
Cook the pasta in salted water until al dente and then drain, reserving 1 cup of the cooking water.
Mix the cream with the tomato pulp, the corn rinsed under cold running water and well drained, and the coarsely chopped olives. Season the mixture with freshly ground black pepper and a pinch of salt and add to the cooked pasta. Cook for 1 to 2 minutes over a medium heat, then add the pasta cooking water and the cooked codfish flakes and simmer for another minute.
Cover the bottom of an ovenproof dish with a third of the grated cheese, spread the creamy pasta on top and then finish with the remaining grated cheese. Sprinkle with oregano and bake in the oven until golden on top.
Serve your creamy codfish pasta immediately with a side salad.
