How about preparing a Green Codfish, a simple, tasty and healthy recipe with the best protein, the codfish.

Ingredients

500 g deep-frozen soaked codfish Riberalves
600 g of potatoes
1 tablespoon of virgin olive oil
2 tablespoons grated Parmesan cheese
Salt and pepper

for the sauce:
1 large clove of garlic
1 teaspoon coarse salt
2 canned anchovy fillets
1 teaspoon old-fashioned mustard (with grains)
1 tablespoon of capers
4 tablespoons chopped fresh basil
2 tablespoons of chopped parsley

Preparation

How about preparing a Green Codfish, a simple, tasty and healthy recipe with the best protein, the codfish.

Make the sauce: in a mortar and pestle, mince the garlic clove with the salt until it becomes a paste. Crumble the anchovies into the ­mixture and add the mustard, capers, basil and parsley. Stir again and set aside.

Peel the potatoes, cut them into slices and bake for 7 minutes. On a greased baking tray, place a layer of potatoes (once drained), a layer of cleaned diced codfish, cover with the green sauce, put another layer of potatoes, which you brush with olive oil, season with salt and pepper and sprinkle with freshly grated Parmesan cheese.

The tray goes in the medium oven for 20 minutes, and… it’s ready to serve, accompanied by a green salad ­seasoned with olive oil, salt and lemon!
