Ingredients
200 g feta cheese
Olive oil to taste
200 g cherry tomatoes
2 cloves garlic
Black pepper to taste
Basil to taste
300 g spaghetti (or other pasta as desired)
Salt to taste
Preparation
Thaw the codfish steaks and cook them in boiling water for 8 to 10 minutes. Drain (reserve 1 cup of the cooking water), remove the skin and bones, and flake the cod.
Place the feta cheese in the centre of an ovenproof dish greased with olive oil and surround it with the cherry tomatoes and the peeled and crushed garlic cloves. Drizzle with olive oil, season with freshly ground black pepper and basil leaves, and bake in a preheated oven at 200 °C for about 15 minutes.
Cook the pasta in salted water and drain well.
Mix the cheese, tomato and garlic mixture well until it becomes a creamy sauce. Add the cooking water from the fish and stir. Now add the cooked pasta and the codfish flakes and stir again. Serve seasoned with black pepper and basil leaves cut into thin strips.
