Codfish Croquettes

Ingredients
2 medium onions
50 ml olive oil
3 cloves garlic
200 g wheat flour
100 ml milk
Juice of half a lemon
Chopped parsley to taste
Salt to taste
Pepper to taste
Nutmeg to taste
1 egg
Garlic-and-parsley breadcrumbs
Vegetable oil for frying
Preparation
Boil the fish for 7 minutes and then shred it.
Use a blender to lightly chop the codfish and then put it on a plate.
Put the olive oil and the chopped onions and garlic into a pot and fry gently over a low heat until golden brown. Add the codfish and cook for 5 minutes. Stir from time to time.
Add the flour and mix well into the cod. Pour in the milk, mix everything very well, let it thicken, and turn off the cooker. Season with salt, pepper, nutmeg and lemon juice. Sprinkle with chopped parsley and mix well.
Put the mixture onto a place and leave to cool. Once it has cooled, shape it into croquettes with your hands.
Dip the croquettes in the beaten egg and the flavoured breadcrumbs and then fry in very hot oil until golden brown.
