Riberalves Christmas Codfish

Ingredients
1 l olive oil
4 large potatoes, finely sliced
2 garlic cloves, chopped
1/2 tsp. turmeric
1 pointed cabbage, cut into thin strips
4 boiled eggs, sliced
1/2 whizzed cornbread
1 chorizo, cubed
1/2 sprig of parsley, chopped

Add the codfish steaks to a pan and cover them completely with olive oil. Bring to a boil and cook for 30 minutes.
In the meantime, toast the cornbread and lightly fry the chorizo in a frying pan. Remove the codfish and cook the potatoes in the same olive oil for about 15 minutes.
Place 2 tablespoons of olive oil in a frying pan and fry the turmeric and chopped garlic until crispy. Add the cabbage and cook until soft and shiny.
In a bowl, mix the toasted cornbread, fried chorizo and chopped parsley.
Place alternating layers of potato, cabbage, egg and codfish on a baking tray. Top with the crumbled cornbread mix and serve.
