Riberalves Codfish and Beer Stew

Nothing could be better than a delicious meal made with the best Portuguese codfish! Try this recipe for Riberalves Codfish and Beer Stew!

Ingredients

1 onion, sliced
2 cloves garlic, chopped
1 ripe tomato, diced
2 tablespoons olive oil
1 red bell pepper, sliced
33 ml pale beer
2 Riberalves ready-to-cook codfish steaks
2 medium-sized potatoes, sliced
Sea salt to taste
Black pepper to taste
Chopped coriander to taste

Preparation

Sauté the onion, peppers and garlic in olive oil. When golden and translucent, add the tomatoes and cook until they start to fall apart. Keep the mixture on a boil, and add the beer.

Now add the potatoes and, if they are not completely covered with liquid, add a little water. Season with salt and pepper and cook for 15 minutes.

Add the codfish and cook for 8 minutes, adjusting the seasoning at the end.

Serve your Codfish and Beer Stew sprinkled with coriander.
