Runny Codfish Rice

Ingredients
400 g shredded codfish
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
½ red bell pepper, diced
1 bay leaf
2 diced ripe tomatoes
60 ml white wine
1 tablespoon tomato pulp
200 g carolino rice
Chopped parsley to taste
Salt to taste
Pepper to taste

Preparation
Put the codfish in a pan of water and bring to a boil, then turn off the heat and let stand for 1 minute. Drain the codfish, reserving the water.
Put the olive oil, onion, bell pepper and garlic into another pan, fry gently until the onion is translucent, then add the tomato and the bay leaf and bring to a boil.
Add the white wine and tomato pulp and bring back to a boil.
Add the rice and 500 ml of the codfish cooking water, and season with salt and pepper.
Cook for about 15 minutes until the rice is almost fully cooked and then add the codfish.
Serve immediately sprinkled with parsley.
