Rainbow Codfish Rice

A recipe packed with colour and flavour. Try this Rainbow Codfish Rice recipe made with the best Portuguese cured codfish!

Ingredients

1/2 of a Ready-to-Cook Codfish Loin
1 tablespoon olive oil
1 clove garlic, chopped
1 onion, chopped
1 bay leaf
1 tomato, chopped
1/2 carrot, sliced
1 cup julienned kale
1 coffee cup wild rice

Preparation

After thawing the codfish loin, I cut it in half and set half aside to use for another recipe.

First, I put the olive oil, garlic, onion, bay leaf and tomato into a pan. Always keeping the heat low, I added the carrot and the cabbage as soon as the onion became translucent. As soon as the cabbage wilted I added the codfish and some water. I left the codfish to cook and then removed it from the pan. At this point, I added the rice and the hot water needed to cook it. When the rice was ready, I discarded the bay leaf and served the rice with the codfish.
