Stuffed potatoes with codfish

Ingredients

500 g of deep-frozen shredded codfish Riberalves
6 big potatoes
1 onion
3 cloves of garlic
5 dl of milk
0.5 dl of oil
50 g of flour
chopped parsley q.s.
Salt and pepper q.s.
aluminum foil

Preparation

Wash the potatoes with the skin, wrap them in foil and bake them in a preheated oven at 180ºC for 45 minutes.

Meanwhile, defrost the shredded codfish, boil it in water, drain it and shred it very finely. Peel and wash the onion and garlic cloves and chop them finely.

Heat the olive oil in a pan, add the onion and garlic and fry, stirring occasionally, until golden brown. Sprinkle in the flour, stirring constantly, then pour in the milk, stirring constantly, and let it cook until it becomes creamy. Add the codfish and some chopped parsley, stir and adjust the seasoning.

Remove the potatoes from the oven, cut a “lid” on them, remove a little of the pulp, keeping them whole, fill them with the codfish preparation and bake them again until golden brown. Remove from the oven and serve decorated to taste.

The potatoes stuffed with codfish are ready!
