Sweet potato rolls stuffed with codfish

200g Riberalves cod loin
200g sweet potato puree (I used orange pulp)
1 teaspoon of olive oil
1/4 cup spelled flour
1 dessert spoon of olive oil
1/3 onion
1/2 tomato
1 tablespoon of chopped parsley
1 cup spinach in pieces

Preparation
Sweet potato rolls stuffed with codfish. Shall we prepare it?
Defrost the codfish.
Remove the skin and bones and shred it.
I put the olive oil and the finely chopped onion in a pan. Bring to the boil and as soon as the onion is translucent add the chopped tomato and parsley.
I let it cook for a few minutes, added the codfish and when it was almost ready I added the spinach.
Leave to cook until all the liquid has evaporated. Allow to cool.
Mix the mashed potato with a teaspoon of olive oil and the flour. (The dough should become pliable, add a little more flour if necessary).
Divide the dough between 4 to 6 equal parts. Open them, in your hand and fill with the codfish mixture. Close and cook on both sides in a non-stick pan.
