Stuffed Tomato with Codfish

Ingredients

1 large tomato
120g Riberalves cod loin
1 tablespoon chopped green pepper
1 tablespoon chopped onion
1 cup leek
1/2 chopped carrot
1 tablespoon of chopped parsley
1 tablespoon of olive oil
2 tablespoons of corn flakes
1 slice of grated low-fat cheese
q.s. oregano

Preparation

Defrost the codfish, remove the skin and bones.

Cut a “lid” on the tomato and remove the pulp.

Put olive oil in a pan, followed by the onion. As soon as it softens, add the carrot and the pepper. After another minute or two add the leek and cook.

When almost ready, add the shredded codfish, the parsley and turn off after about 2 minutes. Programme the oven at 180 degrees.

Stuff the tomato with the codfish and leek mixture. On top of it, mix the corn flakes, grated cheese, and oregano.

Bake in the oven for about 35 minutes or until the tomato is cooked and the cheese is melted.
