Stuffed potatoes with codfish

Ingredients

250 g deep-frozen soaked codfish Riberalves
4 large potatoes
2 tablespoons of olive oil
1 cup of «crème fraîche»
2 tablespoons chives
100 g pitted black olives, thinly sliced
2 tablespoons grated Parmesan cheese
salt to taste

Wash the potatoes, brush them and remove the dark spots. Boil them for 15 minutes. Then drain and brush all the surface with olive oil. Wrap them in foil and bake in a hot oven until tender (the time depends on the quality of the potatoes).

Remove the potatoes from the oven, cut them in half, remove part of the pulp with a small spoon and put it in a bowl. Mash part of the pulp, add the crème fraîche, the shredded cooked codfish, the chives, the olives, the salt and mix until it becomes a cream.

Fill the potatoes with the cream, cover with ­grated Parmesan cheese and ­bake in a hot oven, just until golden brown. Serve the Stuffed potatoes with codfish with a nice green salad.
