Ingredients

2 packs of Riberalves Boneless Codfish Loins
Olive oil to taste and cooking oil for frying as required
200 g mini-plum tomatoes
Salt, fleur de sel and black pepper to taste
4 tablespoons of sliced almonds
1 large leek
Flour as required

Preparation

Our chef suggested this recipe for Baked codfish with almonds in crispy leek nests. Shall we give it a go?

Thaw the boneless codfish loins and dry them well with kitchen paper. Grease an ovenproof dish with olive oil and place the codfish loins in it skin side down. Surround the fish with the tomatoes, drizzle olive oil over everything and season with freshly ground black pepper. Place the sliced almonds on top of the boneless codfish loins and season only the tomatoes with salt. Bake in a preheated oven at 200 °C for approximately 15 minutes.

Cut the leeks into thin julienne strips, coat in flour, shake well and fry one portion at a time in hot oil until golden brown. Remove from the frying pan and place on kitchen paper.

Serve the baked boneless codfish loins over a nest of crispy leeks and roast mini-plum tomatoes.
