Barreirense-style Codfish

Directly from Brazil, a delicious recipe for Barreirense-style codfish, made with the best Portuguese cured codfish – Riberalves!

Ingredients

2 Riberalves Ready-to-Cook Codfish Steaks
4 large Asterix potatoes, chipped 2 tablespoons olive oil
2 onions
Olives
1 tablespoon paprika (achiote)
Parsley
Salt and black pepper
Oil for frying

Preparation

Season the codfish with black pepper and salt if necessary. Grease a grill pan with olive oil and cook the codfish over a medium heat until the flakes begin to separate.

Fry the chipped potatoes in very hot oil until light golden in colour, remove and set aside.

In the same pan where you cooked the codfish, fry the onion with plenty of olive oil and two cloves of garlic, and add the paprika.

Put the potatoes into an ovenproof dish, place the codfish on top and add the onion with the paprika olive oil and the olives.

Bake your Barreirense-style codfish in the oven at 180 ºC for 20 minutes.
