Codfish brandade stuffed Hokkaido pumpkins

2 garlic cloves
200 ml cream
40 ml olive oil
3 tbsp. Breadcrumbs
2 Hokkaido pumpkins
100 g Azores cheese, grated
To prepare these delicious Codfish brandade stuffed Hokkaido pumpkins, follow the steps below and enjoy!
- Place the frozen codfish in a pan and cover with water.
- Bring to the boil and then cook for 10 minutes. It’s ready!
*For a 250 g steak
Wait for the codfish to cool down and flake it.
Heat half of the olive oil. Add the codfish and chopped garlic.
Stir with a spoon until smooth.
Add the heated cream, alternating with the remaining olive oil, while stirring.
Season with lemon juice, salt, freshly ground pepper and nutmeg.
Pre-heat the oven at 180 °C.
Cut off the top off each pumpkin and scoop out the inside. Stuff the pumpkins with the codfish brandade and sprinkle with cheese. Bake for 30 minutes.
