Codfish Gnocchi

Ingredients

600 g of deep-frozen soaked Riberalves codfish
300 g of sifted wheat flour
300 g of unpeeled potato (cooked the day before)
4 eggs
200 g of grated parmesan cheese
200 g of melted butter
salt
Nutmeg
100 g of breadcrumbs (optional)
1 tablespoon of extra virgin olive oil

Preparation

Boil the codfish, shred it and drain well. In a bowl, mix the flour, salt and nutmeg. Add the cooked, peeled and mashed potatoes.

Gradually add the eggs and olive oil. Mix well, working the dough with a wooden spoon. Let it rest for 1 hour.

Cut the dough into long pieces and cook in boiling water with a little salt for a few minutes (until they come to the surface). The gnocchi are ready.

In a gratin dish, alternate the layers of gnocchi with the codfish, drizzle with butter, sprinkle the parmesan and the breadcrumbs (optional) and bake in the oven for au gratin. To eat and cry for more!
