Codfish Soft Cakes

120g Riberalves cod loin (clean, without skin and bones)
180g cooked broccoli
1 egg white
125ml milk
1+1/2 tablespoon of rice flour soup
1 tablespoon of olive oil
1 clove of garlic
1/2 onion
q.s. nutmeg
q.s. Chopped parsley

Defrost the codfish, clean and shred it.

Place the olive oil in a pan with the chopped onion and garlic. As soon as the onion turns translucent, add the codfish and broccoli. Season with nutmeg.

Once the codfish is cooked, stir well with a wooden spoon, so that the codfish and broccoli are well crumbled.

Then stir in the flour, followed by the milk, which is added little by little, stirring well. After boiling, mix in the chopped parsley and leave to cool.

Programme the oven at 185 degrees.

Grease two ramekins with olive oil and flour.

Beat the egg whites until stiff and carefully fold into the previous mixture. Distribute the dough into the cups and bake in the oven for about 35 minutes.

Serve the Codfish Soft Cakes immediately.
