Codfish with hazelnuts

Ingredients

4 cod loins (150 g each) soaked in deep-frozen Riberalves
300 g of bow dough
1 lemon
1 tablespoon of wheat flour
1 small chopped onion
7 tablespoons of butter
1 package of spinach (fresh or frozen)
3 tablespoons of «crème fraîche»
3 tablespoons of vegetable oil
Nutmeg
4 tablespoons of hazelnuts, peeled and chopped
Salt and pepper

Preparation

Cook the pasta in plenty of water until it is “al dente”.

Season the codfish with lemon juice, salt and pepper and sprinkle with a little wheat flour.

Sauté the onion in a tablespoon of butter and add the spinach. Add the crème fraîche and nutmeg.

Heat the oil with two tablespoons of butter in a frying pan over a medium heat and fry the loins until golden brown (3 minutes on each side).

Remove the codfish from the pan, add two ­tablespoons of ­butter and the chopped hazelnuts and let them brown. Pour this mixture over the loins and serve with the spinach and pasta, to which you should add another two tablespoons of butter.
